SUPER FAST Pumpkin Cookies

2 ingredients... yes that's it!

In large mixing bowl add 1 box SPICE CAKE MIX and 1 small can of PUMPKIN.  Mix by hand well.  Scoop onto cookie sheet close together.  They don't spread much so you can get a lot of cookies onto one sheet.  I like to use the Pampered Chef small/medium scooper. BAKE 350 for 25-30 min.(these are soft cookies)

  2. They are SUPER soft. There is NO crunch or hard parts on bottom or top no matter how long you cook them. Usually I cook them an additional 5 min once you start seeing the cracks at the top. They can be gooey in the middle if you don't cook long enough, they should be a bit moist in the middle, that is normal because of the pumpkin. You can always pull one off and break in half to see if it's cooked the way you like. We like ours really moist in the middle. My dad likes them more cooked so its more cake like. You just have to cook them longer. I've never burned any. I have under cooked them though... I just put them back in the oven 5-10 more min. You really can't mess these up. :D Let me know how they turn out for you! Some people like to add mini chocolate chips to them.

  3. Thank you.. I am going to try it.. Thank goodness I to have the pampered chef cookie scoops and cooling racks.. lol wouldn't bake without them..
