Bechamel Sauce

6 C. hot milk
10 1/2 TBSP butter
1 cup flour
1/2 tsp salt
1/2 tsp nutmeg

Melt butter, whisk in flour. Cook 2 min. Add hot milk little by little whisking. Add salt and nutmeg. simmer on low 10 min. Remove from heat and cover.
