Overnight Oatmeal

1/4 cup Oats
1/4 cup fruit
6 oz yogurt flavor of choice

Other options to add:
Coconut milk
Chia Seeds
Flax Seeds
Honey
Cinnamon

Mix in container and place in refrigerator overnight.

Banana Oat Muffins

Mix:
1/2 C. melted butter
2 C. brown sugar

Add and mix:
2 eggs
bananas

Add:
1 tsp. vanilla
2 1/4 C. flour
1 C. oats
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. cinnamon

Bake 350 for 25-30 min


Banana Muffins

3-4 bananas
1 C. sugar
1 egg
1/3 C. butter melted
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 C. flour
1 tsp. vanilla

Bake 350 for 20 min

Oatmeal Cookies

1 stick butter
1 C. brown sugar
1/2 C. sugar
1 egg
1/4 C. water
1 tsp. vanilla
1 C. flour
1 tsp. salt
1/2 tsp. baking soda
3 C. Quick Oats

Beat butter, sugar, egg, water and vanilla until creamy. Add flour, salt & baking soda. Mix well. Stir in oats. Place on cookie sheet. 

Bake 350 for 12 min

Peanut Butter Cookies with Quinoa


2 cups cooked/cooled quinoa
3/4 cup peanut butter
1/4 cup pure maple syrup
1/4 tsp sea salt
3/4 cup rolled oats
3/4 cup unsweetened shredded coconut
1/2 cup mini chocolate chips

Preheat 350

Combine quinoa, peanut butter, syrup, salt and oats.  Blend with electric mixer.  Stir in coconut and chocolate chips. 

On paper lined cookie sheet scoop out 2 TBSP sized balls or use Pampered Chef medium scoop and press down slightly.  Bake 15-20 min.  Cool and store in refrigerator.

Honey Oatmeal NO-BAKE chocolate peanut butter cookies



1/2 cup organic honey
1/4 cup organic extra virgin coconut oil
4 TBSP Ghirardelli natural unsweetened cocoa powder
3/4 cup organic natural peanut butter, creamy or chunky
1 tsp vanilla
3/4 cup shredded unsweetened coconut
3/4 cup cooked quinoa
1/2 cup oatmeal

Bring honey, coconut oil and cocoa to a boil on medium heat.  Turn down heat and simmer for 3 minutes.  Remove from heat and stir in peanut butter, coconut, quinoa, oatmeal and vanilla.  Scoop out desired size (I used Pampered Chef small scoop) onto a cookie sheet covered in waxed paper.  Refrigerate until set.  Store in zip lock bags or air tight container in the refrigerator or freezer. 

Makes approximately 32 cookies using the small scoop.

Peanut Butter Banana Oatmeal Cookies


No sugar added (just from bananas and applesauce)

3 ripe bananas mashed (or 2 if using applesauce)
1/3 c organic natural peanut butter
2/3 cup applesauce (exclude if using 3 bananas)
1 tsp. vanilla
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1 1/2 cup quick or old fashioned oats

1/3 cup mini chocolate chips
1/2 cup unsweetened shredded coconut
1/4 cup nuts (optional)

Preheat oven to 350


Line cookie sheet with parchment paper. 

Mix mashed bananas, peanut butter, applesauce, vanilla and spices. Add oats, chocolate chips, nuts and coconut.  Mix well.

Scoop 2 TBSP on baking sheet. Press down slightly. They do not spread when baking. 


Bake for 20 min. Cool slightly before eating. 
Makes 1 dozen. (You can add 1/4 cup cocoa to make chocolaty)

Whole Grain Pancakes

Feeds 8 people. You can put them in a freezer bag and pop them in the toaster.

3 1/2 cups Whole Wheat flour
2 1/2 cup Oats
3 tsp baking powder
1/4 cup brown sugar (opt)
1 1/2 tsp salt
1/2 cup flax seed or flax flour
1/2 cup wheat germ 
2 tsp cinnamon
4 eggs
1 1/2 cups milk
2 cups unsweetened applesauce
2 1/2 tsp. vanilla

Beat eggs, milk, applesauce, vanilla.  Add remaining ingredients.  Mix until smooth.  Add more flour/milk if needed. Should be easily spreadable.

No Bake Cookies

2 cups sugar
1/2 cups milk
1/2 cup butter
1/6 tsp salt
3 TBSP Cocoa
1/4 cup peanut butter (optional)

Combine all above  ingredients in tall pot.  Bring to a boil on MEDIUM HIGH heat, stirring.  Once boiling turn down heat to MEDIUM LOW (#3) and continue to boil for 10 minutes stirring occasionally.


Add:
3 cups quick oats
1 cup coconut (optional, if not using coconut add another 1 cup oats)

Stir well... add:
1 tsp. vanilla
Mix.

Drop onto wax paper and allow to set.  I like to use the small or medium scoop from Pampered Chef.

Meat Loaf with Cucumber Sauce

1 1/2 lbs. ground beef (less fat % the better)
1 cup oats
1 small onion chopped
1 1/2 tsp. salt
1/4 tsp. pepper
1 cup tomato juice or sauce or V8
1 egg beaten
2 garlic cloves

Mix all together and place in a loaf pan.  Bake 350 for 1 hour 15 min.  Let set 5 min. before slicing.

Here is a sauce you can add to the top of your meat loaf if you are looking for a way to jazz it up, I found it when I had a million cucumbers in my garden! Or you can just add ketchup....

Cucumber Sauce:
2 cucumbers seeded, peeled and diced very small
1/2 tsp. salt.
2/3 cup plain yogurt
1/2 tsp chopped fresh mint
1/2 tsp dill

Add diced cucumber to a strainer and sprinkle salt over it and fold.  Let drain for 10 min.  Mix rest of ingredients together in a bowl and add cucumber, mix in well.  Serve over meat loaf.

Banana Oatmeal Protien Shake

1 cup milk
1 TBSP cocoa
1/2 banana
2 TBSP Peanut butter
1/2 c. quick oats
1/4 c. applesauce
3-4 ice cubes

BLEND WELL at least 1 minute.
