Arrie Mae's Corn Casserole
Saute in 1/2 stick butter:
1 onion chopped
1 green pepper chopped
1 box jiffy muffin mix
1 can cream style corn
1 can whole kernel corn
3 eggs beaten
4 oz. cream cheese
Mix first 4 ingredients together. Add onion and green peppers mix well. Add cubed cream cheese. Place in casserole dish.
Bake 350 for 1 hour.
After baking, add cheddar cheese on top and serve.

4 chicken breast
2 eggs
1 C. almond meal
1 C. Parmesan cheese
1 TBSP fresh garlic
2 TBSP coconut oil/olive oil - butter combo
1 can marinara sauce
2 tsp Italian seasoning
Mix:
Place oil in pan and heat. Scramble eggs and add garlic in a dipping dish. Mix almond meal, Italian seasoning and Parmesan cheese together in a separate dish. Dip chicken into egg then into almond meal mix. Place in pan. Cover and cook on medium low heat until dark golden in color (about 5-8 min each side) and flip.
Preheat oven to 375
Prepare baking dish by placing about 1/2 cup marinara sauce on the bottom. Place cooked chicken on top. Add more marinara sauce on the top of the chicken and sprinkle more Parmesan cheese on top.
Bake about 10 min.

Almond Flour Pancakes
1 C. almond meal

1/2 C. protein powder

Hard Boiled Eggs
Place eggs in a large pot covered by an inch of cold water. Bring to boil. Turn off heat and cover pot. Let sit for 11 min. Remove eggs from pot and place in ice water.

Banana Pancake
3 eggs whipped
1 banana mashed
1 tsp vanilla
1 tsp cinnamon
Combine all ingredients and cook in hot pan oiled with coconut oil. Cook about 4 min each side.

Baked French Toast
In a very large bowl, break apart desired type of bread into large pieces. 2-3 slices per person. Add 3-4 teaspoons cinnamon and mix.
In a medium bowl, whisk 2 eggs per person. Add 2 cups milk and whisk again.
Get 1-2 blocks of Philadelphia cream cheese and cut into squares.
In a large deep baking dish, place a layer of bread and cream cheese. Alternate back and forth until all bread and cream cheese is used with a layer of bread at the top.
VERY slowly, drizzle the eggs over the top of the bread covering the entire dish.
Bake at 375 about 20 min or golden on top. Serve with syrup.

Quinoa Egg Bake
Serves 10
1 1/2 cups uncooked quinoa rinsed
16 eggs
2 cans evaporated milk (or 2 1/2 cups milk)
2 Tbsp chopped fresh garlic
3 tsp chopped fresh thyme
1 tsp salt
1 tsp pepper
4 cups baby spinach packed, roughly chopped
2 cups finely shredded Romano Parmesan cheese
Preheat oven 350. Butter a large deep dish. (If halving this recipe use an 8x8 metal or glass baking dish) Add eggs into a large bowl and whisk. Add all other ingredients BUT NOT the cheese into a large bowl and stir well. Pour mixture into dish and jiggle slightly to settle the quinoa. Cover tightly with foil. Bake 45 min. Remove foil and sprinkle all the cheese evenly over top. Return to oven and bake 15 min longer until lightly golden on top. Cool about 5 min.

Coconut Chicken
Serves 8
12+ chicken tenderloins (or chicken of your choice, cook accordingly)
2 eggs beaten
Mix:
1 cup Almond flour
1 cup unsweetened coconut flakes
1/4 tsp sea salt
3 TBSP coconut oil
Heat coconut oil in large non-stick skillet. Dip chicken in egg then flour mixture. Fry 4-5 min each side, for thicker chicken cook longer.

Almond Flour Pankcakes
1 1/2 cups Almond Meal
1/2 tsp baking soda
1/4 tsp sea salt
1/2 tsp + cinnamon
3 eggs room temperature
5 TBSP coconut milk
2 TBSP honey
1 tsp vanilla
Mix all the dry together then add the liquid. Set aside 5 min. Heat skillet with coconut oil.

Whole Grain Pancakes
Feeds 8 people. You can put them in a freezer bag and pop them in the toaster.
3 1/2 cups Whole Wheat flour
2 1/2 cup Oats
3 tsp baking powder
1/4 cup brown sugar (opt)
1 1/2 tsp salt
1/2 cup flax seed or flax flour
1/2 cup wheat germ
2 tsp cinnamon
4 eggs
1 1/2 cups milk
2 cups unsweetened applesauce
2 1/2 tsp. vanilla
Beat eggs, milk, applesauce, vanilla. Add remaining ingredients. Mix until smooth. Add more flour/milk if needed. Should be easily spreadable.

Egg Salad
- 1 tbs organic mayonnaise
- Dash of curry, sea salt and pepper
- 1/2 tbs chopped red onions
- 4 cherry tomatoes halved
- 1 tbs chopped cucumber
Instructions:
1. Mash up your eggs with the mayonnaise to your desired consistency.
2. Add the curry, salt and pepper and mix.
3. Stir in the onions and cucumbers.
4. Gently stir the tomatoes into the mix.
5. Enjoy your egg salad on a bed of lettuce

Cheesy Egg Bake
16 eggs
2-3 cans chilies
2 pounds shredded cheese (Mexican blend is amazing, or cheddar)
1 can evaporated milk
1 tsp melted butter
2 TBSP flour
Mix eggs, chilies, cheese and evaporated milk.
Melt butter in a 11x14" dish.
Tilt to coat bottom of dish.Sprinkle with flour.
Pour in egg mixture.
Bake 350 for 1 hour.
Additional fixings: diced tomatoes, mushrooms, bell peppers, bacon, ham, sausage, fresh baby spinach, Parmesan cheese. Serve with fruit on the side and some good for you toast :D

Garden Bake
2 zucchini diced
2 yellow squash diced large pieces
1 onion chopped (I love red onions)
3 small tomatoes diced
2 large carrots chopped small
1 pkg Cremini mushrooms
6 eggs
3 cups milk
2 1/2 cups Bisquick (Trader Joe's Multi-Grain baking/pancake mix)
3/4 tsp pepper
1 1/2 tsp salt
Preheat oven to 400
Rub olive oil on a large 11x14 dish and add chopped squash/zucchini, onion, mushrooms and tomatoes.
Sprinkle top with Parmesan cheese.
In a separate bowl combine eggs, milk, Bisquick, pepper and salt. Blend for 15 seconds. Pour over top of veggies.
Bake for 45 min or golden on top AND knife inserted in center comes out clean. (this is like a quiche so if there is a little sticky on the knife it is okay.
Cool about 5 minutes before serving.
Sprinkle cheddar cheese over top.

Sweet Corn Bread
1 cup flour (whole wheat flour)

1 TBSP baking powder
1 tsp salt
2/3 cup sugar (or 1/3 cup honey + 1/4 cup sugar)
3 TBSP melted butter
1/3 cup oil
1 1/3 cup milk (or soy/almond milk)
2 eggs beaten
Mix well but don't over mix... place in greased 8x8/9x9 dish. Bake 400 for 25 min.

Chicken Pot Pie
Pre-heat oven to 350
* 2 cups organic baby carrots cut in half
* 3 small potatoes from the Trader Joe's Potato Medley (I like to mix up the colors of potatoes, purple, red and yellow)
* 1 small onion
* 6 hard boiled eggs
* 1 large can cream of chicken soup or cream of mushroom is ok (optional, add heavy cream substitute)
* 2-3 chicken breast boiled and chopped
* 1 cup chicken broth (or use the broth from boiling the chicken)
* 4 cups Bisquick (Trader Joes, multi-grain baking mix)
* 2 cups milk
* 1 stick of butter
* 1 cup peas
* 3 garlic cloves (optional)
Start with boiling your eggs.
In a separate pot boil your chicken until cooked thoroughly.
While chicken is boiling chop carrots, potatoes and onions.
Remove chicken and leave about 1 cup of broth in pot. Add carrots and onions and boil for about 5 min.
While boiling; in a separate bowl mix Bisquick and milk. This is your topping. It should be thick but easy to spread.
Chop chicken and add chicken, cream of chicken soup and potatoes to carrots and onion mixture.
Turn down heat to low. Stir occasionally.
Melt butter.
Add mixture to a large deep baking dish. Spread evenly.
Cover the top with peas.
Peal eggs and use an egg slicer to slice, placing them on top of the peas covering the entire dish.
Spread the topping CAREFULLY over the eggs so the edges touch the side of the dish (so the butter doesn't go into the mixture and stays on top of the topping).
Drizzle the butter over the top of the topping.
Bake 30-45 min UNCOVERED until the top is golden brown and cooked through. Not doughy in the middle. Check with a fork or knife, should be like a biscuit.

Simple Whole Wheat Bread - 1 loaf recipe
In bread maker OR mixing bowl add:3/4 cup hot tap water
1 tsp yeast
3/4 cup whole wheat flour (freshly ground preferred or best you've got)
2+ TBSP honey
** start the bread maker on DOUGH setting to start mixing (or mix by hand 2 min)
Slowly pour in yeast/water mixture mix an additional 2 min or until wall mixed TURN OFF BREAD MAKER.
LET RISE 30 min ** THIS WILL BE YOUR SPONGE ** After 30 min. look at your sponge. It should be bubbly and risen almost double. This will let you know if you have good or bad yeast as well.
1 TBSP oil
1/2 tsp salt
2 TBSP gluten flour (if you do not have gluten flour ITS OK! use 1/2 cup regular flour and only 1 cup whole wheat flour)
1 1/2 cups whole wheat flour (add more flour to get the correct consistency***)
1 egg (opt)
Let bread maker mix the dough or knead for 10 min. Let rise 30 min. Take out dough and shape into a loaf. Place in OILED bread pan. Cover with oiled plastic wrap. Let rise until doubled in size, about 30-45 min.
Bake 375 30 min.
***dough should be fully kneaded, smooth and NOT sticky when you tap on it. If using a bread machine you can check while it's kneading... adding water/flour when needed.

Grandma Haymore's Milk Rice
3 cups UNCOOKED rice (white or brown) ~ cook
While rice is cooking, in a very large pot add:
6 eggs beaten
1 1/4 cups sugar
1 tsp. vanilla
1/2 tsp salt
5 cups milk (this is only to start. (You will add more milk totaling about 7-8 cups).
Heat through on medium heat, NEVER getting to a boil while rice is cooking 15 min or so. Once rice is done add it to the milk mixture. Continue to heat through until you do not see any egg whites hanging from spoon. Another 10-15 min.
We like ours a tiny bit thick, you can always add more milk to cool it down and make it more thinned out.
Top with Nutmeg
Cranberry Pie
2 cups fresh cranberries rinsed
1 egg
3/4 cups sugar
1/3 cups brown sugar
3/4 cups four (whole wheat four)
1 stick melted butter
1/4 cup chopped nuts, walnuts or slivered almonds (optional)
In a 9" pie pan non-stick or greased on the bottom only ADD cranberries. Spread out evenly. Sprinkle with 1/3+ cup brown sugar.
In bowl add egg and sugar. Mix. Add flour and butter. Mix. Pour over top of cranberries and carefully spread to cover all cranberries and make even. If you are using nuts, sprinkle nuts over the top.
Bake 325 40-45 min until golden.
